I think Cantal Entre Deux
is a bit like mature English cheese. It is certainly one of our favourites and we always have some in the fridge. If we want to make a quiche we buy red Cheddar at Carrefour - the Montlucon branch, I think.
I echo what Virtdave says about American cheese, we were amazed at how awful it was when we went to stay with our son in California. He suffered withdrawal symptoms for our local Farmhouse Cheshire and used to pay vast amounts of money to import it in bulk every now and then.
