Elderberry Ideas

Hi - I have just discovered I have an elderberry bush in my garden - that has lots and lots of berries on it at present. Does anyone have any ideas what I can do with these? - Thanks

you can google for recipes--every year in May I put up sixteen bottles of elderflower wine, which is well received by guests. I think one can make a nice wine from the berries, too, as well as a conserve, but I've not tried this.

These were my mothers recipes I hope that you enjoy them.

Elderflower cordial

1kg (2lb 3oz) caster sugar
850ml (1 ½ pts) boiling water
45g (1 ½ oz) citric acid
15 large elderflower heads, flowers snipped from stems
2 lemons sliced

Prep 20 mins (stand 5 days) makes approx 1.7 ltrs (3 pints)

Put caster sugar into a large bowl add the boiling water, stir until sugar has dissolved. Stir in citric acid and add elderflowers and sliced lemons. Cover and leave to stand for 5 days stirring daily. Put a sieve lined with double thickness muslin into a large bowl. Scald the sieve and the bowl with boiling water and drain well. Strain the cordial through the muslin lined sieve into the bowl then pour into clean sterilised bottles. Cork the bottles and store in the fridge. It will keep for up to a year. To drink dilute 1 part cordial to 2 – 3 parts water add ice and lemon to serve.

Elderflower Champagne

675g (1 ½ lb) caster sugar
4.5 litres (1 gallon) water
2 tablespoons white wine vinegar
Finely pared rind and strained juice of a large lemon
4 large elderflower heads (flowers snipped from stems)

Prep 20 mins stand 48 hours makes 4.5 litres (1 Gallon)

Put the caster sugar into a large bowl and add the water, stir well until the sugar has dissolved. Stir in the white wine vinegar, lemon rind and juice, elderflowers. Cover and stand for 48 hours. Strain through a scalded muslin and pour into clean sterilised screw top bottles. Screw tops on and leave for 3 weeks or longer by which time it will be very fizzy. Store in a cool place. Chill well before serving.
