Cèpe season

I've never cooked them before and a lovely neighbour has just presented me with two whoppers, what now? Help!

Lovely. I like to slice them up and cook them in butter in a small saucepan (with the lid on). I normally add a sliced clove of garlic, a few freshly picked rosemary leaves, a shake of soya sauce and a few drops of Worcestershire sauce. These help to bring out the umami flavour for me. Just cook for a few minutes until the mush are all wet and steaming in their own juices. Have them on hot buttered toast or in an omelette.

I did most of what you suggested but I love the idea of Worcestershire sauce! I was confused by the 'mousse' - take it off or leave it on. In the end I removed it as it had a greenish tinge I didn't like the look of.
Very tasty with a plain omelette and a green salad. :D
